Caves Caravan Park’s damper recipe

Caves Caravan Park held a damper cook-up evening at the camp kitchen. Below is the recipe we put together. While we know you typically cook damper as one big loaf in a camp oven buried in coals, we found the small rolls of damper wrapped in alfoil worked well for large crowds. It allowed each child to have fun making their own creation and add special ingredients like nutella or rosemary!

Damper Ingredients

  • 2 cups self-raising flour
  • Pinch of salt
  • 1 cup water (or enough to make a dough)
  • Secret ingredient: olives, rosemary, Nutella, marshmallows!
  • Alfoil (to wrap your damper creation)

 

How to Prepare:

  1. Measure out your flour into a bowl
  2. Add salt
  3. Gradually add water and mix well till it makes a firm dough
  4. Put on a floured table and knead the dough for a few minutes
  5. Shape the dough into small buns (the smaller the bun, the quicker it cooks)

 

How to Cook:

  1. Wrap the damper in Alfoil. Make sure you mark your name on it
  2. Place in the coals. Turn every 5 minutes
  3. Cook for approximately 10-15 minutes or until it sounds hollow when tapped
  4. Serve hot with butter or Nutella!!
